Cauliflower Hummus

Original recipe from Brassicas: Cooking the world’s healthiest vegetables.

Ingredients

4 cups coarsely chopped cauliflower (about 1 small cauliflower)
2 small garlic clove, smashed
1/3 cup well-stirred tahini

3 Tbsp olive oil
2 Tbsp freshly squeezed lemon juice or lime juice
1 tsp salt
1/4 tsp cayenne pepper
3/4 cup tightly packed fresh cilantro leaves

Preparation
  1. Steam the cauliflower using a collapsible steamer basket over a large pot that is not touching the water. Put 1-2 inches of water in pot. Steam for about 5 minutes or until tender
  2. Remove from steamer and dry off excess water
  3. Transfer cauliflower to food processor and pulse until finely chopped
  4. Add the garlic, tahini, oil, lemon juice, salt, and cayenne pepper and process until hummus is thick
  5. Add cilantro and process until chopped
  6. Serve chilled or room temperature
Notes

The hummus will keep for a couple of days in the fridge.

Yield: 3 cups
