Ingredients
4 cups coarsely chopped cauliflower (about 1 small cauliflower)
2 small garlic clove, smashed
1/3 cup well-stirred tahini
3 Tbsp olive oil
2 Tbsp freshly squeezed lemon juice or lime juice
1 tsp salt
1/4 tsp cayenne pepper
3/4 cup tightly packed fresh cilantro leaves
Preparation
- Steam the cauliflower using a collapsible steamer basket over a large pot that is not touching the water. Put 1-2 inches of water in pot. Steam for about 5 minutes or until tender
- Remove from steamer and dry off excess water
- Transfer cauliflower to food processor and pulse until finely chopped
- Add the garlic, tahini, oil, lemon juice, salt, and cayenne pepper and process until hummus is thick
- Add cilantro and process until chopped
- Serve chilled or room temperature
Notes
The hummus will keep for a couple of days in the fridge.
