Ingredient
3 large eggs
2 cups white sugar
1 cup vegetable oil
2 Tbsp vanilla extract
3 cups all-purpose flour
3 tsp baking powder
2 tsp cinnamon
2 tsp nutmeg
2-3 cups shredded squash
Preparation
- Preheat oven to 325.
- In a large bowl, use an electric mixer to beat the eggs until fluffy. Add sugar, oil, and vanilla. Gradually mix in the flour, baking powder, cinnamon, and nutmeg.
- Fold in squash and transfer to muffin pans.
- Bake for 20 minutes.
Notes:
This recipe was originally for bread but I wanted to try making muffins. Also, after making these I realized that adding walnuts, craisins, or even chocolate chips would have been a good addition. So when making these feel free to add in any type of dried fruit or chocolate to the mix.
Yield: 16 muffins
