Yellow Summer Squash Muffins

Ingredient

3 large eggs
2 cups white sugar
1 cup vegetable oil
2 Tbsp vanilla extract
3 cups all-purpose flour
3 tsp baking powder

2 tsp cinnamon
2 tsp nutmeg
2-3 cups shredded squash

Preparation
  1. Preheat oven to 325.
  2. In a large bowl, use an electric mixer to beat the eggs until fluffy. Add sugar, oil, and vanilla. Gradually mix in the flour, baking powder, cinnamon, and nutmeg.
  3. Fold in squash and transfer to muffin pans.
  4. Bake for 20 minutes.
Notes:

This recipe was originally for bread but I wanted to try making muffins. Also, after making these I realized that adding walnuts, craisins, or even chocolate chips would have been a good addition. So when making these feel free to add in any type of dried fruit or chocolate to the mix.

Yield: 16 muffins
