Ingredients
4 potatoes
2 eggs
1/2 cup milk
1 cup all-purpose flour
1 cup shredded cheddar cheese
1 chopped onion
1 garlic clove, minced
1 tsp parsley, fresh or dried
1 tsp baking powder
1 tsp salt
1/2 tsp ground black pepper
2 Tbsp butter
Preparation
- Mix together potatoes, eggs, and milk in a large bowl
- Stir flour, cheese, onion, garlic, baking powder, salt, and pepper into potato mixture
- Heat butter in a large skillet over medium heat
- Spoon about 2 Tbsp of batter onto skillet for one pancake. Cook until golden brown, about 4 minutes per side
Notes:
This recipe is super simple and a great side dish. When trying out this recipe I thought the original recipe was kind of bland so I added in the onion, garlic, and parsley to give it more flavor. Also, if you had a different cheese other than cheddar cheese I think it would work great in this recipe. Hope you enjoy!
