Summer Squash Patties

Ingredients

2 cups grated summer squash
2 eggs
1/4 cup chopped onion
1 small garlic clove, minced
1/2 cup all-purpose flour
1/2 cup Parmesan cheese
1/2 cup cheddar cheese
salt to taste
2 Tbsp vegetable oil

Preparation
  1. In a medium bowl, combine all ingredients and make sure to mix well enough to evenly distribute ingredients
  2. In a skillet, heat a small amount of oil and drop summer squash mixture by the tablespoon and cook for a few minutes on each side or until they are golden brown.
Notes:

This recipe is a different way to use up some of the extra summer squash during this time of the year and is also very tasty!

Yield: 4-6 patties
