Can I recreate here for you an awesome flavor synergy that happened in our kitchen? It’s worth a shot. The excitement for me lies in blending hot and cold ingredients and enjoying the dish while those temperatures haven’t yet met in the middle. The potatoes are the only hot ingredient unless you’ve just made soft cheese and it’s still warm. The rest are fridge temp.
1 pound boiled potatoes, cubed
2 TBSP Basil garlic mayo
2 TBSP Ricotta or sour cream or homemade soft cheese
Pickles, roughly chopped
2 Hard boiled eggs, peeled and cubed
1 TBSP minced onion
Salt and pepper, to taste
Mix together and enjoy. Add and substitute depending on what’s at hand. If you are not using a flavored mayo, simply chop in some aromatic herbs and/or minced garlic.
