Recipe adapted from Green Kitchen Stories
Ingredients
3 cups grated beets (about 4-5 beets)
2 small onions
4 garlic cloves
7 oz. feta cheese or firm tofu
3 Tbsp olive oil (2 Tbsp for burgers and 1 Tbsp for cooking)
2 eggs
1 1/2 cups rolled oats
1 handful fresh basil
1 pinch salt and pepper
Preparation
- Peel and grate beets, onion, and garlic or use a food processor
- Place grated vegetables in a large bowl
- Add olive oil, eggs, and rolled oats and mix everything well
- Add feta cheese or tofu, basil, salt, and pepper and stir to combine
- Set aside for about 30 minutes so the oats can soak up the liquid and the mixture sets (this step is important for the patties to hold together)
- Try shaping the patties. If the mixture is loose add some more oats
- Cook on stove top, a couple minutes on each side
Notes
I adapted this recipe by adding more onion and garlic than the original recipe. I also used fresh cabbage as topping but you could use fresh lettuce, tomatoes, or even avocado as toppings.
Yield: 6-8 patties
