Harvest Window: October-November
General Info
Celeriac (also called celery root), is one of the more unique vegetables that we grow. It’s in the same family as celery and parsley, but has the benefit of being able to last longer since it is a hearty root. The flavor is somewhat sweet, and fairly mild, celery-esque. As with other roots, such as carrots, it it very versatile. After peeling off the bumpy outside, the interior flesh can be eaten raw or cooked. It’s delicious when grated into a fresh salad or cut into matchsticks with other roots for some oven fries. It may also add an aromatic depth to savory dishes such as soups or casseroles.
