General Info
While smaller than onions, shallots lend a beautiful mild flavor to dishes and are wonderfully sweet when roasted.

Storage
Shallots have incredible storage capabilities. They can be successfully stored through the fall and winter. They do well in many ‘room temperature,’ spaces, aim for 55-70 degrees. Keep out of direct sunlight to avoid sprouting.  Store in mesh or paper bags, or a basket. Do not store in plastic bags, this does not allow the shallots to ‘breath,’ and it gathers humidity which leads to quicker deterioration.
