Garlic Scapes

General Info

As the garlic plant matures, it sends up bright-green shoots that curl with a closed seed pod on top. Edible garlic scapes are harvested before the seed pods open up. They’re trimmed from the garlic plant since the scapes draw nutrients away from the bulbs, which leads to smaller bulbs at harvest.

Garlic scapes start out tender and get tougher as they mature. They can be enjoyed raw or cooked. They’ll be a bit more potent raw, sautee or grill to mellow their flavor.

Storage Information

Store in the fridge for fresh use. Puree into pestos or sauces, and freeze for later.
