Tomatoes

Harvest Season: mid-August through October

General Info

Tomatoes are a heat loving fruit in the nightshade family. We grow the majority of our plants out in the field, with some in the greenhouse to extend the season both earlier and later. Each season we grow 6-10 varieties in total. These varieties include tomatoes of different sizes, colors and best uses including cherry. slicer, paste and plum.

Varieties We Grow

cherry: Sungold, Black, Jasper
slicer: Pruden’s Purple, Bobcat
paste: Amish Paste, Opalka
plum: Juliet, Yellow mini, Mountain Magic

Storage Info

Most tomato varieties are not known for their long-term storage abilities in their fresh state. We harvest on the day of or night before distribution. A general rule would be to plan to eat them within four days or preserve them in some fashion. There are an infinite number of ways to put them up, which is why there are so many sauces, salsas and condiments that are tomato based. If you are interested in making sauces, but not into canning, just freeze your project instead! This will retain the flavor and texture of the preserve. We also enjoy steeping dehydrated tomatoes in olive oil and slow roasting them with herbs.
