Kale

General Info

Kale is high in antioxidant vitamins A, C and K. It’s in the same family as broccoli and cabbage and is low in calories.

Varieties We Grow

Each year we grow 3-5 varieties of kale. Each variety has an area where it shines such as tenderness, cold hardiness or disease resistance. By cultivating a diversity, we can enjoy each of these strengths throughout the growing season.
Dinosaur (also called Lacinato and Toscano)
Curly varieties: Judy, Winterbor
Red varieties: Redbor, Scarlet, Red Russian

Storage

Wrapped in a bag in the fridge works well. If it is not wrapped, it will wilt more quickly.
Kale can also be blanched and frozen in packs for future use. Then it is an easy addition for soups, egg dishes and more.
