Potatoes are a tuber, develop under the soil and are dug to be harvested. As they are a common vegetable in this area and quite versatile, we grow them for regular distribution from mid July to the end of the season. They also store well for consumption throughout the winter.
Varieties We Grow
Each year we grow 4-8 varieties of potatoes. We aim to have a representation of gold, blue and red along with fingerlings. Some of our staples include:
Fingerling: Banana & Austrian Golden Crescent
Blue: Adirondack Blue & Libby
Gold: Kennebec, Yukon Gold, Salem, German Butterball
Red: Red Maria & Red Norland
Storage
Potatoes prefer cool, dry storage spaces, always out of direct sunlight. The ideal temperature is around 40 degrees. With small quantities, they can be stored in the fridge. With larger quantities options vary depending on the time of year, but may include: minimally heated porch, closet or garage space. We’ve also stored them successfully in the house, layering them in sand.
